Beef Recipes

Each week at the Bouctouche Farmers Market Marlene Gaunce, from Hidden Hollow Farms prepares one of her beef specialities. Below are some of the recipes that Marlene uses to make these delicious beef dishes.
Spicy Deli Meat

Beef Brisket
Rub garlic powder over beef.

Add :
2 tablespoons coarse salt
2 tablespoons mixed pickling spice
1/2 cup brown sugar

Place beef in sealed plastic bag.

Turn daily for 10 days.

Wash pickling spice off meat.

Cook in crock pot or on top of stove until cooked.

Slice and enjoy.

BEEF JERKY

Cut 1 round steak into 1/4" strips.

Marinate for 24 hours in:
1/3 cup soya sauce
1 tsp salt
1 tsp onion salt
1/3 cup A-1 steak sauce
1 tsp garlic salt
1/4 tsp pepper

TERIYAKI SAUCE
1 bottle soya sauce
6 cloves garlic, crushed
1/4 cup olive oil
1/4 cup molasses
1/2 cup brown sugar

Bring to a boil, reduce heat, then simmer for 1/2 hour.
Cool, then pour over beef to marinate.

MINUTE STEAK BRUCHETTA

1 minute steak (I use tenderized round)

Place steak in frying pan. Cook on one side. Then turn.

Cover steak with salsa sauce.

Place cooked rice on top of salsa sauce.

Sprinkle with grated cheese.

Place cover on frying pan for 5 minutes.

Serve with a green salad for a quick and tasty meal.
