Broccoli Salad
1 cup mayonnaise
1/2 cup white sugar
2 tbsp vinegar
1 head of broccoli (florets and tender stalks)
onions or shallots to taste
1/2 cup grated cheddar cheese
4 crisp bacon strips, minced
1 head of cauliflower (florets and tender stalks)
Optional: sunflower seeds and or raisins
Method:
Toss everything together and add dressing.
Refrigerate.

Potato Salad
5 or 6 potatoes
3 good squirts of vinegar
onion, finely diced
celery, finely diced
According to taste, add:
mayonnaise
sale
white pepper
dijon mustard
bit of white sugar
tiny bit of Horseradish
dill weed chopped, fresh or frozen
sweet pickles, chopped, with a bit of juice
sour cream
eggs, hard cooked, chopped
green and or red peppers, chopped
Method
Boil potatoes until done. Mash while hot
Add about 3 good squirts of vinegar. Cool
In a bowl, mix mayonnaise, salt and pepper, mustard, sugar, horseradish, dill weed, sweet pickles
Add onion and celery
Mix well.

Wild Rice Salad (cold)
1 cup wild rice
4 cups of water
1/2 cup of raisins
1/2 cup cashews, chopped
1/4 cup green onions, sliced thinly
Method:
Cook rice in water for 1 hr; rinse
Puff raisins in hot water for 15 min
Broil cashews slightly
Mix all ingredients together
Dressing:
1/2 cup mayonnaise
1 tdp Dijon mustard
1 tbsp honey
1/2 tsp curry powder
pinch of cayenne pepper
1 tbsp Worcestershire sauce
Method:
Mix all ingredients together and add to rice.
