Vegetable Dip Recipes

Here are a couple of recipes for making great dips to use when serving vegetables raw. Buy your vegetables fresh from the Farmers Market and enjoy these dips with them.
Confetti Dip
for raw vegetables

3 eggs
3 tbsp vinegar
3 tbsp sugar
8 oz cream cheese
dash of Tabasco
1 tsp butter
salt & pepper
1 red pepper, finely diced
1 green pepper, finely diced
1 small onion, finely diced
Mayonnaise (optional)

Method:

Beat eggs in top of double boiler. Add vinegar and sugar.

Stir constantly while cooking. Cook until mixture begins to thicken. (Do not place directly on hot water.) Remove from heat.

Stir in cream cheese; dash of Tabasco, butter, salt & pepper.

Add red pepper, green pepper and onion.

Mix well. Mayonnaise is optional

Curry Dip
for raw vegetables

1 1/2 cups mayonnaise
2 tsp curry powder
1 tbsp grated onion
1/2 tsp salt
1/2 tsp dry mustard
pepper
dash of Tabasco sauce

Method:

Mix all ingredients together.
