Confetti Dip
for raw vegetables
3 eggs
3 tbsp vinegar
3 tbsp sugar
8 oz cream cheese
dash of Tabasco
1 tsp butter
salt & pepper
1 red pepper, finely diced
1 green pepper, finely diced
1 small onion, finely diced
Mayonnaise (optional)
Method:
Beat eggs in top of double boiler. Add vinegar and sugar.
Stir constantly while cooking. Cook until mixture begins to thicken. (Do
not place directly on hot water.) Remove from heat.
Stir in cream cheese; dash of Tabasco, butter, salt & pepper.
Add red pepper, green pepper and onion.
Mix well. Mayonnaise is optional
